A Go-To Weeknight Dinner: Roasted Sausage, Potatoes, and Shallots
This recipe is one of my absolute go-to dinners—it’s easy, delicious, and healthy. I found it on Deliciously Organic by Carrie Korem a few years ago (thank you, Carrie!) and it’s been on monthly rotation in our house ever since.
I made it again the other night after we returned from a week at the beach. I was craving something home-cooked, comforting, and simple—and this always hits the spot. Even better? There are never any leftovers.
It’s a one-pan wonder made with Italian sausage, potatoes, and shallots, all tossed in olive oil and roasted until golden. I sometimes throw in halved Brussels sprouts for an extra veggie boost—they’re delicious here, too.
You can easily substitute chicken sausage if you prefer, but I personally love using Italian pork sausage for the best flavor.
This recipe is grain-free, making it a great option for gluten-free family members or dinner guests.
